100 Meatballs

  • Ground beef 80/20 or 85/15 (total approx. 9 to 9 & 1/2 lbs)
  • 8 eggs
  • 2 Cups Milk
  • 4 Cups Italian Bread Crumbs
  • 2 Cups Parmesean Cheese
  • 1/4 Cup Onion Powder
  • 1/4 Cup Garlic Powder
  • 2 TBSP Parsley
  • 2 TBSP Basil
  • 2 TBSP Oregano
  • 2 TBSP Salt
  • 2 TBSP Pepper

This can be broken down into smaller batches quite easily. I quarter the recipe and work in smaller batches but it can be done all at once with a larger bowl for mixing.

Add the eggs and the milk and wisk. Add the rest of the ingredients and combine until the breadcrumbs soak up the liquid.

Add the ground beef and gently fold in and incorporate.

I used an ice cream scooper (x2) to keep the meatballs uniform size and shape.

Add the meatballs to a cookie sheet and add about a cup of water to the cookie sheet. This will keep the meatballs moist in the oven.

Bake at 350ยบ for 30 minutes.

I let them cool slightly and rub the bottom on a dry paper towel to remove some of the fat that has rendered out during cooking.

This recipe makes 100 meatballs. I used two packs of ground beef from Sams Club for this recipe. It totaled a little over 5 lbs.
