BASIC BECHAMEL SAUCE

4 Tbsp. salted butter
4 Tbsp. flour (i use all purpose)
2 Cups half n half
8 oz. grated fontina cheese
1 Tbsp. sugar
dash of nutmeg
salt and pepper to taste

Melt 4 tablespoons of the butter over low heat. Add the flour and stir to combine; Stirring constantly for about 3 minutes. Turn heat up to medium and whisk in the half-and-half, adding a little at a time. Wish until it thickens, about 5 minutes. Lower the heat, season with the salt, pepper and sugar and add the cheese. Stir until cheese is melted and sauce is smooth.

Works well, for a macaroni and cheese base, as well as with a pasta dinner
