Chipotle Honey Vinnegrette

Ingredients:

6 tablespoons red wine vinegar
1/4 cup honey
3/4 cup vegetable oil
1/2 teaspoon dried oregano
1-1/2 teaspoons salt
1/2 teaspoon ground black pepper
2 chipotle peppers in adobo sauce (this is spicy, if you don’t want it spicy – see substitution below)
2 small garlic cloves, roughly chopped

Instructions
Adobo chipotle peppers substitution:

Mix 1 tablespoon tomato paste (or if you must – ketchup), 1tablespoon cider vinegar, 1 teaspoon paprika/cayenne powder mix, 1/2 teaspoon cumin, a pinch of oregano, a pinch of garlic powder, and a pinch of salt.

Adjust the cayenne proportions to best fit your flavor and spiciness expectations.

Combine all ingredients in a food processor or nutribullet and blend. Refrigerate until ready.
