COCA-COLA CAKE

2 c. unsifted flour
2 c. sugar
2 sticks butter
3 tbsp. cocoa
1 c. Coca Cola
1/2 c. buttermilk
1 tsp. baking soda
2 eggs, beaten
1 tbsp. vanilla
1 1/2 c. miniature marshmallows

ICING FOR COCA COLA CAKE
3/4 c. butter
3 tbsp. cocoa
6 tbsp. Coca Cola
1 box confectioners’ sugar

Sift flour and sugar into a bowl. Heat butter, cocoa, and Coca Cola to boiling point. Pour over flour and sugar mixture. Add buttermilk, baking soda, eggs, vanilla, and marshmallows; mix. Batter will be thin and marshmallows will float to top. Pour batter into oiled, floured oblong pan. Bake at 350 degrees for 30 to 35 minutes. For the Icing. Combine first 3 ingredients. Heat to boiling. Pour over sugar; beat well and add nuts (if desired 1 Cup). Serves 12 to 24. This cake keeps moist for days if it lasts that long. Remember to frost while cake is hot.
