Instant Pot Fiesta Chicken

  • 3 to 4 chicken breast (3 larger or 4 smaller)
  • 1 packet Fiesta Ranch dip (by the salad dressing)
  • 1 can black beans (drained and rinsed)
  • 1 can Rotel
  • 1 can corn not drained
  • 1 block cream cheese

Directions

Place the chicken in the Instant Pot and sprinkle the packet of Fiesta Ranch dip over it.

Add the corn (not drained), Rotel, and the black beans.

Add the block of cream cheese.

Press the poultry setting on the Instant Pot and add 5 minutes making it a total of 20.

Allow for a natural steam release and shred the chicken with two forks.  Stir the pot to incorporate the corn, rotel, beans and cream cheese.

Serve in a warm tortilla or over nachos.  Can also be used as a nacho chip dip.
