Instant Pot Pulled Pork

Ingredients

1 Boston Butt Pork Roast (3 – 4 lbs.)

1 medium sized onion

2 tbsp. better than bouillon

1 cup of water

1 tsp. McCormick Grill Mates Bourbon Brown Sugar rub

2 tbsp of Karo or honey

1 tbsp. minced garlic

3 to 4 tbsp of oil (I use canola)

salt, pepper, onion powder, garlic powder

couple drops of liquid smoke

Directions

Begin by starting the Instant Pot on Sauté setting on high.  Allow the pot to get nice and hot before adding the oil.

While the Instant Pot is heating up, season the roast with the Grill Mates, salt, pepper, onion powder and garlic powder on all sides.

After the Instant Pot is hot enough brown each side of the roast for about 5 minutes.

While the roast is browning, slice up the medium onion.

Grab a microwave safe bowl or measuring cup and add one cup of water.  Add 2 good sized teaspoons of the better than bouillon and microwave for about 30 seconds.  (Bouillon cubes can be used in place of the better than bouillon, i’d use about 3) . Add in the Karo, garlic, and a couple drops of the liquid smoke.  I also added a couple shakes of the Grill Mates to this too.  Set aside.

When the roast is browned on each side, remove the roast and let it set for 5 minutes. Add the onion to the pot and sauté the onion scraping up the brown bits from the bottom.

After a few minutes of the onions sautéing add in the liquid mixture that is in the microwave safe bowl or measuring cup to the Instant Pot and stir to incorporate all of the flavor from the bottom of the pot.

After the roast has rested for 5 minutes, slice up the roast in approximately 3 inch chunks and add it back into the Instant Pot.

Turn the Instant Pot on Manual for 28 minutes and when completed let the Natural Release take place for 15 minutes.  After 15 minutes do the quick release.

Take each piece out and pull apart with a fork.  I also separate the fat.  Its that tender!

Strain the liquid and add pork back into the strained liquid.  Best Pulled pork ever.

You can serve this on buns with barbecue sauce or even on a plate with mashed potato and a veggie.  Its that good and versatile.
