PICO DE GALLO

Ingredients:

 

4 Ripe plum tomatoes (I’ve used Roma as well), seeded and finely chopped

1 small white onion, finely chopped

1/2 cup cilantro leaf, chopped (you can add more to taste)

2 or 3 jalapeno peppers, seeded and deveined – finely chopped

1 Tablespoon lime juice – fresh always works best

pinch of salt to taste

 

Directions:

Combine all the ingredients and let it set for at least an hour.  I have eaten it right away but it works best if the flavors marinate together for a while.
