PINEAPPLE CHICKEN

1 8 oz. can pineapple chunks. (heavy syrup)
2 lbs. chicken breast cut into pieces
2 Tbls. olive oil
1 can chicken broth
1/4 cup vinegar
2 Tbsp. brown sugar
2 tsp. soy sauce
1 large clove garlic (minced)
1 med green pepper cut into small squares
2 Tbsp cornstarch
1/4 cup water

Drain the pineapple chunks and save the syrup, set aside. In a non-stick pan, brown the chicken in the olive oil. After nice and brown add the pineapple syrup, broth, vinegar, brown sugar, soy sauce and garlic. Cover and cook over low hear for about 40 mins. Add green pepper, onion and pineapple and simmer for about 5 more minutes or until peppers and onions get soft. Stir occasionally. In a mixing cup combine the cornstarch and water and gradually add it into the chicken and sauce until it thickens.

Serve over rice.
