RICE PUDDING

2 Cups Cooked white rice (feel free to experiment with other rice)
1 1/2 Cup Milk
1/2 Cup Half n Half
1/3 Cup sugar
2 T. Butter
1 Egg
1 1/2 tsp. vanilla
Pinch of salt
1/2 Cup raisins (optional)

Place the cooked rice and milk in a saucepan and cook over medium heat until it gets thick and creamy, about 15 mins. Add in the sugar and stir. Beat the egg in with the half and half and add it along with the vanilla, butter and salt to the saucepan. If using raisins add them now. Continue stirring until a nice and thick consistency.
