Scotch Eggs

6 Hard Boiled Eggs
1 lb of ground sausage
2 eggs
Oil to Fry
Flour Bread
Crumbs

Place the ground sausage in the freezer while you peel the hard boiled eggs. You dont want to freeze the sausage, you just want to make it nice and cold so that its easier to work with. After the eggs are peeled, take the sausage and divide it up into 6 equal portions. Flour the surface. Flatten the sausage as thin as you can get it and place one hard boiled egg in the middle. Wrap the egg with the sausage and cover completely. In a seperate Bowl scramble the 2 un cooked eggs. Roll the prepared sausage covered eggs in the flour on the working surface and then dip them in the scrambled eggs. Roll in bread crumbs. Fry the eggs in a deep fryer or a pot with hot oil for about 6 to 7 minutes. Oil should be about 350.

Not much flour is needed on the working surface as well as on the eggs themselves before dipping into the wet eggs. You can use any style of breadcrumbs.
