YAKAWHOIE’S POTATO SALAD

3 Lbs of potatoes (small in size)
2 Sticks of celery ~ chopped
1 Medium Onion ~ chopped
1 Small Green Pepper ~ sliced in rings
2 Hard Boiled Eggs ~ chopped
1 or 2 Pinches of celery seeds (optional)
1 Palm of Parsley (about 1/2 Teaspoon)
Salt & Pepper
1/4 Cup cider vinegar
1 Tablespoon of sugar
1/4 Cup of “cold” water * (add a little at a time to salad to mix)
this is not always necessary, this just moistens it up a bit
6 – 8 Tablespoons of Helleman’s Mayonanaise

Cook potatoes and peel (about 20 minutes) Cut into bite size pieces
In a large boul ~ add all the ingredients
*See note on cold water
Fold all together!
